Through this dish, I want to tell the story of Panama as a meeting point of cultures. Inspired by my Chinese heritage, Afro-Caribbean influences, and local traditions, it celebrates the communities that shaped our identity. By making the most of every ingredient and highlighting the value of humble products, I aim to showcase how creativity and respect for raw materials can transform simple elements into something meaningful. Through the use of overlooked ingredients, I hope to convey a message.

My grandfather is from Chocó, my mother from Neiva and my father from Manizales; I was born in Bogotá and raised in Cali. I can therefore say that I am a man of Colombia, one who has discovered the world of cuisine through the lens of his roots and experiences. In my dish, I use ingredients and preparations that are part of everyday home cooking: hormiga culona from Santander, cassava bollo from the Caribbean, cimarrón from the Pacific, heart of palm from Putumayo, and pirarucu and katara from the Amazon, alongside my interpretation of pachamanca (cooking underground).

This dish is rooted in my heritage and in a tradition that forms part of my identity. The years I spent in Italy reconnected me with my childhood, pasta, the countryside and traditional butchering gatherings. Through the cappellaccio, puchero consommé and fermentation, in this case, broad bean miso, I seek to bring memory and contemporary expression together. After travelling the world, I came to understand that Argentina is often associated only with meat. I therefore want to showcase the richness of our thousands of kilometres of coastline and the potential of Patagonia through Argentine robalo, caught using artisanal methods suited to its behavior in the South Atlantic.

I want to express the connection between memory, place, and transformation. The corn harvest brought families together around the table and, inspired by my grandmother's recipes, I celebrate an ingredient that symbolizes abundance, tradition and a sense of belonging. I use both corn and chicken in their entirety, embracing a whole-ingredient approach. I want to show that gastronomy can honor its roots while evolving through creativity, technique and responsibility.

Volver is a return to my roots and to the flavors that shaped my childhood in Chocó. The socarrat tuile evokes my grandmother’s arroz atollado; the chimichurri recalls the herbs grown in azotea gardens that filled her kitchen with their aroma; and the coconut, chontaduro and fish represent my family and the place I come from. Through contemporary techniques, I seek to preserve this memory and carry it into the future, showing that tradition can evolve without losing its essence.

I chose to develop my cuisine in Cusco because I know that the Andes are a living source of innovation, memory and knowledge. “Cusco desde los Andes” reinterprets the traditional Cusco adobo to show how chillies, corn and tubers can engage with contemporary techniques without losing their identity. As a chef, I want to contribute to a gastronomy that values its roots, gives visibility to its regions and builds the future upon the diversity of its communities.

This dish is rooted in a dual heritage: bananas, a key ingredient in Costa Rica’s history, and my mother’s cooking. I still remember the boiled green bananas sautéed with caramelized onions that she served alongside chicharrones, a combination that shaped my childhood. Today, I use the fruit, peel, and blossom of the banana to honor that legacy and bring together, on a single plate, the memory of a country and that of my home.

I see the future of gastronomy as the ability to transform memories into impact. Chefs have a responsibility to preserve identities, create value for producers and artisans, and build bridges between cultures. Memorias was born from my journey from Peru to Costa Rica. Through this dish, I honor my roots and give a voice to the hands behind every ingredient, demonstrating that true innovation is born of respect for origins and a commitment to future generations.

As a proud young Mexican chef, I honor my roots through local ingredients and ancestral traditions. Inspired by Oaxaca’s rich culinary heritage, my dish expresses identity, memory, and resilience. It celebrates Latin American unity by highlighting our shared history, vibrant diversity, hard work and the beauty that emerges when our cultures come together through flavor.

Punta Hermosa is my home, where my father taught me to read waves and honor the ocean, shaping my identity through Peruvian biodiversity and Italian heritage into my cooking. Today, seeing bottom trawling devastate our sea breaks my heart. This dish is an emotional wake-up call, a zero-waste creation that brings my childhood to the table. It connects my history to an urgent mission: inspiring people to protect the Peruvian sea that gives us everything, the same sea woven into my identity.

I see cuisine as memory and a profound respect for origins, elevating the rustic character of smoking to the highest level of technical sophistication. In my dish, Magellanic lamb, Pacific luche seaweed and native potato come together to tell the story of Chile’s extreme geography. I want smoke and ash to go beyond their role in cooking and become the common thread connecting our primal fire with the future of gastronomy.

This dish is rooted in my Colombian heritage. The three-meat sancocho evokes Caribbean tradition, communal gatherings and flavors shared around the fire. The corn envuelto pays tribute to Indigenous ancestral heritage and to corn as a symbol of resilience and abundance. A traditional coastal ferment accompanies the rib, bringing out local flavors. The dish embodies a dialogue between the Caribbean and the Andes.

This dish reflects my past, present and future as a chef. Lamb takes centre stage because it was the first animal I learned to break down in its entirety, teaching me to respect every ingredient and make full use of it. It represents my present through honest, unpretentious cooking. Japanese techniques and ingredients reflect the cultural influences that continue to transform me, while the envuelto symbolises roots and memory. Together, these elements express my vision of a coherent cuisine with a strong identity.

The dish I have created has two main purposes. First of all, it conveys my identity. Throughout my years living in different Latin American countries I have created a deep immersion in several cultures and cuisines. This dish contains preparations and ingredients of my home country, but has great influence of the cultures I have gratefully come to call my own. Lastly I decided to represent the stingray. A beautiful and rich protein of humble origins that deserves a spotlight in high gastronomy.

This dish embodies the richness of the Yucatán Peninsula. Through it, I want to portray the union between sea and land, and how that connection has shaped both my character and my approach as a chef. It brings together ingredients from the sea and from the backyards and ka’anches of local communities, highlighting the efforts of those who continue to cultivate the land and preserve its traditions. The concept behind the dish reflects my vision of how we can coexist with both the past and present of cuisine.

The hen is the base of one of our emblematic typical dishes: the sancocho, a soup that is eaten at any time and on any occasion, it is cooked in firewood causing the soup to have smoky notes. It was with this idea that this dish was born, as I was curious about how to use the little parts of it, such as the neck, how the food ferments inside the gizzard and how through the use of one hundred per cent of the ingredients.

Exotic fruits, barks, medicinal plants, and fish were always there, together with his people, the ancestral communities guardians of their cuisine, traditions, ancient techniques.
Today gastronomy is revaluing this legacy of techniques, knowledge of most big amazonian pantry that is constantly evolving.People who live in the cities feel that the Amazon is a distant topic. But that is not the case, we are closer to it because it is a source of carbon and regulator of global climate changes.

As a proud young chef from Mexico, I capture my roots using local ingredients, intertwining cultural traditions with global techniques. Inspired by Oaxaca's rich culinary heritage, my dish showcases our identity, drawing from childhood memories. This creation reflects the vibrant flavors of Oaxaca, honoring our traditions and the essence of my hometown.

With this dish, I aim to express the essence and authenticity of seafood from the Pacific coast, especially in Chile. My intention is to tell a story of respect for the sea and its resources, highlighting the freshness and quality of local ingredients. My goal is to capture the freshness and unique flavor of these ingredients, emphasizing the culinary tradition and art that surrounds them.

My dish was inspired by acarajé, a traditional street food from the Brazilian Northeast. The message I want to convey is the symbol of resistance, conquest and freedom that it has represented for many women around the end of 18th century. Preparing and selling this food was one of the first female professions to emerge in Brazil, allowing many enslaved women to buy their own freedom and that of their acquaintances through the profits they made.

The dish I have thought of is a reversion of the Christmas dish that is always eaten in my house and all over Venezuela, as it represents my first experiences with the palate. I decided to fuse Venezuelan and Argentinean gastronomy, due to my migration to Argentina when I was young, I also included Asian flavours and products from Mendoza, as they reflect all the experience I have had in the last years of my life. This dish mixes my origins, the history of my life and my passions.

Chile, a narrow strip with more than six thousand kilometres of coastline, is in the south of the world. Every dish reflects the uniqueness of a country where water is essential, from the mountains to the sea. The biodiversity is influenced by the Humboldt Current. My dish, ‘Cordillera, Valle y Pacífico’, combines goat cheese from Cajón del Maipo, chascudo, mote and conger eel with mushrooms. Inspired by my childhood and the tradition of my grandparents, I dedicate this dish to Victor and Ana.

I am a proud member of the new generation, who challenge social norms and show our capabilities. Raised with a deep respect for ingredients, I aspire to grow and learn every day. Hungry to make my mark professionally, my goal is to proudly represent my country's rich culinary heritage. Through my dishes I seek to evoke the flavors of the Chilean sea, emphasizing sustainability and respect for ingredients. It is time for the new generations to break the glass.

In my childhood, my grandparents used to have Sunday family lunches and the dish I remember the most is the tongue in sauce, served with onion and coconut sauce. In my village we always accompanied the main course with bananas, even soups. That's why my interpretation was inspired by these Sundays with the family. I believe in local products and tradition, raising the level of the products of my village with modern techniques without losing the traditional flavour.

“Mackerel, plantain and coconut” refers to the day to day life of people living in humble seaside towns in Costa Rica, it highlights the value of these undervalued products and a perspective on a simpler way of living where waste is not an option.In these areas zero waste is not a trend but a viable way to feed an entire family. And instead of seeing it as something that limits it can be a source of inspiration for creating unique preparations and finding ways to enhance their flavour.

Panamanian cuisine is a fusion of indigenous, African, Spanish and Asian influences. The Afro-descendant cultures, especially in seafood, and the indigenous heritage of the Guna, Ngäbe-Buglé, Emberá and others, are vital to our culinary identity. Through this dish, I would like to give you a taste of our ethnic heritage. From our indigenous groups to the African slaves, this dish represents a taste of our gastronomic mix.

Goat is a typical product of my region Mendoza. I have eaten it since my childhood, my grandfather taught me how to cook it on a flame but I never experimented with other cooking methods, so it became a personal search of how to transform it and find other textures, flavours and combinations that complemented it. I want to show that with the same product I can achieve different preparations by working it 100% without wasting anything from head to toe, mixing migratory cultures.

This is an expression of love, honour, affection, subtlety, wisdom, passion and, of course, legacy.
The dish reminds me of my childhood, when at harvest time, mum and dad used to take me and my siblings to harvest the corn cob, remove the amero (corn husk), shuck it and grind it to make envueltos. These wraps had curd in them and we used to accompany them with sweaty fish called catfish and our beautiful Colombian sauce, hogao (sofrito).

Through this dish I would like to show the importance of women as bearers of gastronomic tradition. The clay work of the potters, through which this dish was created and inspired. Emphasizing that broths and soups are considered an ancestral food that is part of the primordial baggage of the history of food, forming a perfect symbiosis that becomes food for the body and connects it with the soul.

Emerging Forest was born through memories I have of my childhood with my grandparents and the teachings they gave me about the products that nature gives us and which many of these we have forgotten, as well as many gastronomic techniques. That is why I decided to use rabbit, a protein that has been forgotten in our gastronomy. That is why I decided to diversify this protein by giving it many uses and using it 100%, creating awareness for the new generation.

Chiriqui's recognized for being the produce pantry of Panama, that’s why my dish's focused on the earth’s bounty with key ingredients of the region. Seren, is a corn soup endemic to the region, with sweet and delicate flavors. My grandmother use the whole corn, from the husk to the cob, because she always says that what the land produces must be used in its entirety. Ubaldina is a homage to her, her heritage, and a journey through my childhood.

On this dish I want to express the life and customs of the first inhabitants of Paraguay. hunters, fishermen, gatherers and growers, showing that with products from the Paraguayan soil, which nature gives us by applying production techniques with adequate knowledge, they can be served with great pride.
The diet of the first inhabitants was based on cassava, corn, sweet potato, banana, vegetables and fruits.
They used hunting and fishing.

Through this dish I express my trajectory and the way I created my personality in the kitchen. It has elements from different countries and experiences that have formed me as a chef. It contains elements from Mexico and Panama, because of my nationality, from Italy by virtue of my descent and gastronomic formation and from Japan after the passion I’ve acquired over Japanese cuisine due to my current job. The fusion of them all create a mix of flavors and techniques that represent me.

This dish represents the diversity from Brazil, using ingredients that match each other and create a comfort space, just like a forest. In the plate is served culture, tradition, and influences from my Italian family. Putting my heart and belifs into a plate.

It’s a celebration of the plantain plant itself, all of it.
Plantain has always been the base of our nutrition. The most productive plant of the country and it’s never been seen as such.
After every ton of plantain consumed, 2 tons of waste are left, because of how little use its other parts. Due to the Chinese and afrocaribbean influence in our gastronomy (and in my heritage), plantain takes 3 forms in my dish: a bread (for the plantain was called bread for the poor) a a siumae, and a tamal.

A short time ago there was an oil spill on the coast of Peru, it made me realize the consequences of spills, they generate a tremendous environmental impact, but I think the wisdom of nature is greater than mine, and its benefits even more so, for this reason I want to use seaweed and mushrooms in my dish. My dish generates awareness but also sustainability, using a product that is not used to supplant others and obtain benefits for human health, for me that's one way to make sustainable cooking.

Alma Patagonia is a creation that captures the soul of Chile´s southern territory. It is a dish that intertwines delicacies from diverse ecosystems, which vary from the depths of the sea, to lush fertile forests. This blend pays tribute to a culture that bases its cuisine on the available ingredients that Mother Earth provides, which must be used fully. Pure nature permeates through a combination of flavors and textures, and surprises the palates of adventurous gourmands.

Give a tribute to Arequipa's Picanterias, Picanterias are places of traditions, good food since the end of the 19th century. Show a bit of the diversity of my country, also let you know ancestral techniques unified with an avant-garde techniques, which the main objective is to give a good experience.

The chinampas is an efficient and sustainable agricultural system, it is an articulated set of artificial floating islands that were built since pre-Hispanic times. Through this dish, which has been inspired by this ecosystem, using only ingredients that are grown or can be found in this place, applying techniques and preparations of Mexican gastronomy, I seek to highlight the importance of chinampas, the organic products that are grown there and also recognize the hard work of the producer.

For this contest I wanted to create a dish that had the essence of my country. For this, use several products that are not commonly used in Colombian haute cuisine but giving them a transformation, respecting their essence that reaches all palates, extolling their properties. All these foods have a great importance in the daily food of Colombians and by including them on my plate they can show the world the diversity that characterizes us as a country.

All the ingridients in my dish come from the farm I grew up, I sowed them myself, and I prepared them using traditional and contemporary techniques. The aim is for the judges to eat a humble part of Colombia at its best. I want this dish to be a way to give a voice to the farmers who had to leave their land and to create reflections about the crops and dishes that call themselves sustainable but often cause damage to the countryside and the traditional knowledge of peasant families.

A fufu portrait is the story of the Riquelme’s, my family from my mother’s side. In all our gatherings we’ll come together around this delicious soup made from fish head, coconut milk, curry, and root vegetables. Why just the head? Because the rest of the fish we pickled it in our family’s escobish.
As a kid, it was beautiful to see all my aunts having fun around those pots trying to feed a battalion. For me fufu and escobish represent the strong bond between my kin and the roots of my people.

The connection we have with our people and the land, our hands are channels with earth. Great dishes can be made using everyday products from our Mexican foods, we must use all of our natural resources without exploiting them.
Heritage, I am not from Oaxaca by birth but my family is, that is my heritage, here I show the value I give to the land of Oaxaca.

I’m very passionate about gastronomy; my country, its people, and its ingredients bring out the flavors, in each one, of my dishes. Self-expression, for me, comes with every texture, color, and form of each detail. I recognize the importance of my surroundings, my community, and the products distinguished by their performance within sustainability guidelines. I have the responsibility to share with diners the richness, tradition, and culture that Mexican cuisine offers.
