A contemporary tribute to the whole suckling pig, expressed through a caramelized loin, delicate porchetta and crispy confit croquette. Granny Smith apple and sage bring freshness, while spiced onion purée adds depth. A Chinese cabbage roll filled with soy-glazed barley, pickled onions and roasted green garlic create balance and complexity. Pork demi-glace unifies the dish, celebrating craftsmanship, sustainability and respect for the ingredient.

Where I come from, self-sufficiency was a lifestyle. This dish bridges that peasant heritage with modern gastronomy, showcasing a sustainable model for the future of cuisine. Almost every ingredient comes from a rural grandmother's garden, or was hand-foraged by me from nearby woods. By practicing true sustainability through wild harvesting and traditional preservation, we find innovation in our roots. No exclusive restaurant can outshine the warmth of a grandmother’s kitchen.

Growing up on a farm taught me to respect every ingredient and the work behind it. My dish celebrates the Krškopolje pig, Slovenia’s only indigenous pig breed, saved by four farmers. Raised on apples and corn, the pig inspired the dish’s key flavours, following the principle: “What grows together, goes together.” By minimizing waste and highlighting local biodiversity, this dish tells the story of my region while promoting a more responsible future for gastronomy.

Through this dish, I would like to express my Hungarian roots and the culinary identity of my region, Eger. The suckling Mangalica pig represents tradition, heritage, and respect for local ingredients, while cabbage reflects the simplicity and resilience of Hungarian cuisine. My goal is to present these humble elements through a modern fine dining perspective, combining history, emotion, and contemporary technique on one plate.

Lamb Serving explores the ritual of gathering around a festive table through the lens of contemporary Israeli cuisine. Inspired by the Jewish Rosh Hashanah tradition of serving lamb’s head as a symbol of renewal and aspiration, the dish reinterprets this idea through multiple expressions of the animal. Raw and cooked preparations exist together, while fermentation and traditional techniques create depth. Inspired by memories of shared meals, bread becomes a final gesture that connects every bite

I was born and raised on the Dalmatian coast. My story begins in Dubrovnik, where fishing connected me to the sea, making cuttlefish an essential part of this dish. I also incorporated my interpretation of Soparnik, a traditional Dalmatian specialty. My journey then led me to Hvar, whose aromatic herbs, especially lavender, shape its flavors. Today, inspired by Zagreb and its focus on local farmers and seasonal produce, I chose quail as the main ingredient, using every part to create a rich jus.

With this dish I want to see how far I can go using very few elements. One piece of turbot, one circle of sorrel and two small garnishes are arranged almost like a diagram, but the flavours are intense, acidic and slightly fermented. My goal is to cook with restraint: to strip away decoration, focus on structure and texture, and learn to say more by putting less on the plate.

Inspired by my grandmother’s rabbit stew, this dish reflects my journey from childhood memories to contemporary fine dining. Using the whole rabbit, each preparation represents family, sustainability, nature, and my evolution as a young chef, combining emotional storytelling with modern gastronomy.

This dish is my culinary signature and a tribute to Slovenia. It features ingredients deeply rooted in our land and the collective memory of our people. Reflecting where I grew up and create today, the plate mirrors my evolution as a chef. My goal is to make modern gastronomy approachable, telling a story that is simple yet complex, boutique yet intriguing. Through the lens of the past, these elements narrate our present and forecast a future where modern dining feels like home to everyone.

Serbia is land of contrasts. Its people know hardship, difficult soil, and scarity - but they also know pride. From struggle comes something almost irrational: Uncoditional Hospitality. When guests arrive, poverty disappears. Everything is placed on the table, and family gathers around it. And there is always Šopska salad. This dish has long surpassed the form of salad. It is prose about people, hardship, and defiance. The salad is no longer left in the corner. Now, it stands in front of you.

It’s an honour to present to you a dish that is deeply inspired by the culinary heritage of Malta — one that bridges tradition and innovation, land and sea, history and identity. This is my dish:Glazed Rabbit loin served with a Maltese barley koji-marinated rabbit leg, carrot purée, and a rich sauce of rabbit bones, local liquor, and prawn head bisque. On the side, a rabbit offal pie inspired by pastizzi, and a consommé that evokes the soul of the Maltese prawn.

Does chicken feet belong in fine dining? I'm from Međimurje, a county in northern Croatia where nothing is wasted, every ingredient has value. Through my girlfriend Candace, I discovered Guyana and Guyanese food embodying the same spirit. Our meals are carb heavy for a reason: our grandparents needed energy to work outside in fields. The connection became ""Poor People's Fine Dining."" My belief is, the value of food is not determined by its cost, but by stories, traditions, and respect behind it.

This dish challenges the idea that the most important ingredient is always the most expensive or prestigious one. While turbot provides the foundation, the onion is the true protagonist. Often left in the background, it is given the opportunity to express its full character alongside chicken, razor clams, and chanterelles. Inspired by Istria, the dish reflects my belief that great cooking comes from understanding, respect, and the ability to reveal beauty in the simplest ingredients.

I see the future of gastronomy as a balance between innovation and heritage. In a world driven by speed, technology, and AI tools, I believe chefs have a responsibility to preserve the knowledge, techniques, and values that shaped our culinary identity. Through visible roots, beef broth, and slowly cooked beef shank, this dish reflects my commitment to respecting ingredients, minimizing waste, and valuing time as an essential ingredient. I believe true cuisine should preserve emotion, memory and identity. In Silesia, where I was born, Sunday meals brought generations together around one table. Rabbit, once raised beside my family home and served only on special Sundays, became a symbol of my earliest memories: my grandmother’s kitchen, my grandfather’s smokehouse, and the wild mushrooms I now forage with my wife. Through contemporary technique, this dish preserves warmth, belonging and the feeling of home for future generations.

The dish is an ode to my hometown Acre, a mixed city of Jews & Arabs, located by the Sea. I Combine haute cooking techniques and local ingredients with classic Jewish recipes, creating a fusion that reflects my hope for peace in our region. I’m using blue crab as the main ingredient, an invasive local species. Diluting it, helps to the restoration of the local maritime ecosystem. It’s presented in the dish in 4 ways, expressing zero waste and Nose to Tail principles with local ingredients.

It has always been impotant to me that we use every part of our ingredients to fight against food waste, that is why is use whole ducks.It significant to me that we also use the techniques of our ancestors for example preserving,foraging.I dedicate the dish to my family and my childhood.I grew up in the countryside where we kept animals. Duck was also an important part of the family meals.The treasures if the forest, the garden the wild plants were always part of our life.

I would like to present my version of the most popular dinner in Poland, which is why I called it Sunday dinner at grandma's. When creating Dania, I was guided by Polish and regional traditions. I want to show that our wonderful home cooking, served in a competitive manner, can be very interesting and tasty. When i working in the kitchen, I follow the zero waste principle, which is why my plate includes elements such as potato skin or the inside of a cucumber, and my plates contain meat skin.

My dish is a tribute to the culinary traditions of eastern Poland. I sourced the sturgeon and caviar from the renowned Antonius brand in a neighboring village. The inspiration for the Masurian floral lace in my recipe comes from my grandmother, a talented embroiderer. My dish also features ferments, deeply rooted in Polish tradition. Accompanying beverage is enjoyed in my home on hot days. I aim to showcase the best of Polish cuisine: good products, respect for tradition, and an open-mindedness.

Gastronomy and poetry are some of the most beautiful expressions that human beings have developed to communicate. Through creativity and innovation, they contribute to questioning in an ever-renewed way how we use culture, and our ways of perceiving and interpreting reality. I have valued this union through the concept of Haiku, poems of 3 verses that precisely talk about everyday life and nature, in a specific place and time.

This dish stems from the global need to change the fine dining concept. I believe that the process of dining in a restaurant should be more educational, interestin and enjoyable for guests, with the help of other arts such as theatrical. With this dish, I will conjure up a performance about Sava Savanović, the first Serbian vampire, and country i came from, with the fact that in dish food will play the main role, where each segment of the dish will tell its own part of the story in this play.

As a young Israeli chef, I believe deeply in the principles of zero waste and seasonal cuisine. These beliefs not only guide my culinary work but also reflect my commitment to sharing and respecting the natural world. My dish, "Pumpkin, Spice & Everything Nice", is a testament to these values,  combining tradition, innovation and responsible cooking.

I’d like to introduce my dish, to express my way of thinking about both cooking and dealing with life outside of gastronomy. the dish depicts a perfect circle of life, forests ( Deer), rivers (crayfish), mountains (cordyceps) all naturally connected and a human (chef) who unitedly combines nature with technology and cares for the environment. Without our healthy and clean approach to life, nature will not survive on its own nowadays, I would like to make people aware of this as much as possible

The story behind this plate starts with a deer and pumpkin. Because I want to take every chance to make my own home grown plants, last spring I planted pumpkin seeds at the edge of the forest, 50 meters from my restaurant. One morning when I walked to my pumpkin field to check up with my ripe pumpkins, I saw that one had a bite taken off. I knew that there has been a deer eating my pumpkins. That is why I decided to connect three main ingredients: Deer, pumpkin and mushrooms. This is my story.

My dish celebrates the tradition and sustainability of the Vipava Valley. Jota made from Turnip Tropinka, served in aluminum dishes, carries the flavors and memories of the harvest. The humble Turnip Tropinka symbolizes simplicity and homeliness. Accompanying it is the skin sausage Krotegin, bread made from grape seed flour, and smoked grape seed oil. The dish blends traditional and modern techniques. Each bite evokes memories of family, vineyards, and values, connecting the past with the future

Today's dish is more than just a meal; it is a plea for sustainability and responsibility. The present we live in is marked by major ecological challenges. Water pollution,food waste,and climate change are just a few of the urgent issues demanding our attention. These are not just statistics; Perhaps the Earth is sending us a message,urging us to return to essentials. Now, more than ever, we need to remember this simplicity and cook with conscience. Come back to our roots. This dish is a manifesto.

The inspiration behind this dish stems from deeply rooted memories of my childhood visits to my grandmother's home. At the heart of her cooking was her rooster dish, a testament to resourcefulness and culinary creativity born out of necessity. In the old times, when resources were scarce, my grandmother relied on every part of the rooster to create the family meals. Even though the dish is now adapted to fine dining techniques, I am transported back to those moments, the essence of home.

Influence of different cuisines from where I learned becoming French and Spanish my biggest influence, without leaving aside the importance of ingredients, traditions, and heritage of my country, Ecuador, taking care of local producers and craftsman, always taking full advantage and respect for the product with a touch of modernity, creating an experience of textures and sensations in each perfect bite.

‘Aljotta’ is a traditional Maltese tomato-based fish broth soup. My dish comprises of homely traditional flavours, in part with a little twist and in the other a more technical and modern to it. The importance is ultimately the flavour of the original ‘Aljotta’; as to impart my childhood memory of my first fishing boat trip, which also was the first time eating the soup. It is also a small taste of Malta, our history and the deliciousness in the simplicity of our cooking.

The Pig's Alms is a sacred ritual deeply rooted in our country's folklore and tradition, people have forgotten about what it means, it is supposed to be about honoring and showing gratitude toward the animal that has given his life for us to survive. I would like with this dish to bring attention to this lost respect towards nature and what it offers us.The dish's flavours represent my cultural gastronomic heritage and origins, the taste of my home,of my childhood and my memories.

My dish is my interpretation to the classic Borscht. I took my mother’s recipe and disassembled it and combined it with the local ingredients and flavor’s. The dish itself served on plates that passed in my family in inheritance.
My goal was to make a dish that combines two cultures, memories from my childhood and also has minimum waste. I tried to use all the parts of all the ingredients.

I Choose this plate because I grew up in a small town next to the sea and the area is rich in fish. I remember that every week I saw my grandmother cook this type of fish with the most of ingredients are the same and I put my signature with my techniques to present you my childhood memories

I discovered my passion for food at an early age while watching my mother create meals . Seeing how much enthusiasm you can put in to each dish drew me in. A local favorite is the Octopus. Coming from a small island in the mediterranean reminds me of how grateful we should be for finding fresh local produce. A main ingredient that i kept constantly on my menu. It reminds me of my childhood when my mum used to slow cook it for a Sunday lunch.

My dish is called Friend's Ear. This is a traditional Hungarian dish. The reason, why this dish is close to my heart is because my Grandmother prepared it a lot for me and my siblings when we were young and I loved it back then, too. My Grandmother is unfortunately dement now and I cannot communicate with Her anymore. I feel like this dish makes us connect again.

By presenting this dish i would like to convince people that we chefs are not only people that stand for many hours in front of the frying pan. We can all agree that we identify ourselves as artists. Plates for us are like a canvas for a painter. We create and express ourselves on it. Just like Leonardo da Vinci did and others. It’s not only our work but a big passion for life that we want to share with people in the restaurants like artists share their creations in galleries. WE ARE ARTISTS!

In a world of abundance, we need to look at a more nursing future. Sourcing ingredients has become paralysing for our planet. Due to over-fishing and over breeding, there is a big impact on the bee lives that provide us reproduction, which is necessary for our lives. In my dish, I combined sustainable farmed sea bass, free range pork and ecofriendly bee products from our little country. The dish shows how important sustainability is and also how the elements of nature are and can be connected.

What would it be like this time to start with what it is now? Let's see the present to recreate the future.
Mankind goes through a roller coaster: pandemics, global warming, war, illegal immigrants, and refugees from hunger.
Why did it get here? Maybe the Earth wants something else from us. Maybe we don't understand that there is a message above us. Indeed, we must be able to return to where we should be, in a much better world.

The day Slovenia proclaimed its independence the Linden tree was planted in front of the National Assembly building, since then it became our symbol for freedom. Brown trout is the most common fish of our rivers and this dish is the love song to Slovenia. I used only trout, linden in different ways, salt, and honey to prove you can make a dish with minimum carbon footprint, humble and basic ingredients but has a complex flavor profile. Whole dish is served on a set of fallen local linden tree.

Working in Mano2, the initiative behind micro seasonality, zero waste and preserving food and flavor through various fermentation techniques began the concept behind this dish. The inspiration behind the story comes from the fall season in continental Croatia where there is a rich abundance of various mushrooms, wild herbs and vegetables. We have showcased them using techniques seen in Mano2 which have preserved and fully expressed its soul purpose while also using the ingredients as a whole.

Through “The story of Cod” I wanted to give a modern twist to a traditional Greek recipe and products that are a part of every table in Greece. The goal was to showcase Greek gastronomic culture through a combination of tradition and modernity. Wanting to highlight the quality of Greek products, I chose to include ingredients found all over Greece. The message I wanted to convey was that complexity can occur through simple things and that we should get inspired by our roots and history.
