This plate is a representation of my core believes as a Chef, cooking with nostalgia, locally raised ingredients that are of great quality and treating them with care. The locally sourced rabbits is paired with carrots, Hen of the wood mushrooms, Swiss chard- all grown in and around the city, this is probably what the rabbit ate for dinner! The whole animal is used in the dish giving it all the respect it deserves and a true display of what food systems in the industry.
