Home Between Two Shores reflects the chef I am today and the one I hope to become. Growing up on the Mediterranean coast of Türkiye taught me that food is memory, identity, and connection. Through lamb and mussels, I bring together the land and sea that shaped me. Inspired by my grandparents, my father, and the journey that brought me back home, this dish expresses my belief that food can preserve heritage, create belonging, and bring people together around a shared table.

Through this dish, I want to express the journey of myself building a life and career in Canada. The flavour inspired by my memories of Thai dishes I grew up with, while I replace the ingredients reflect the season and product I work with around me today. I believe it’s a reflection of adaptation, identity and of course stay connected to where I came from. Thai memories, Canadian Season, and the journey in between.

"Aai's Fish Thali" is my tribute to the coastal food traditions of Maharashtra and the women who preserve them through generations. By elevating familiar flavors such as amti, sol kadhi, wada, kokum, and seafood into a contemporary fine-dining expression, I celebrate heritage, memory, and sustainability. The dish reflects my identity as an Indian chef while showing how traditional knowledge can inspire the future of gastronomy.

Growing up in Busan and now cooking in Vancouver, I am inspired by two coastal cultures connected by the sea. Through oysters, sablefish, geoduck, and especially kim (seaweed), I express the relationship between Korean heritage and the Pacific Northwest. Seaweed is the thread that ties this dish together, reflecting both tradition and innovation. Using French and West Coast techniques, I want to tell the story of my journey between these two shores.

L’Aube au féminin celebrates all that embodies femininity in all its richness and diversity. Rooted in the earth, the beetroot represents strength and resilience; in pink, it celebrates beauty and gentleness. The flowers echo this gentleness and evoke kindness through their healing power. The female duck, the centrepiece of the dish, embodies protection, instinct and freedom. This dish pays tribute to those who infuse every new dawn with light and vitality.

As Mongolian chef working in fine dining in Canada, carrying the values of my nomadic heritage into every kitchen I enter. Like a modern nomad, I adapt to new environments, learn from different cultures, and grow through each experience while remaining connected to my roots. Inspired by the hospitality of the Mongolian Ger, this dish reflects my journey and my ambition to help shape the future of Mongolian cuisine on the world stage.

“Second Generation” expresses my journey as a second-generation Canadian chef shaped by Caribbean and South American roots. Inspired by memories of cooking beside my mother and grandmother soaking salt cod, cleaning live crab, and preparing sorrel drinks, the dish honours the women who shaped me. Through modern technique and personal storytelling, I want to show how heritage, resilience, and diverse voices can help shape the future of Canadian gastronomy.

This plate is a representation of my core believes as a Chef, cooking with nostalgia, locally raised ingredients that are of great quality and treating them with care. The locally sourced rabbits is paired with carrots, Hen of the wood mushrooms, Swiss chard- all grown in and around the city, this is probably what the rabbit ate for dinner! The whole animal is used in the dish giving it all the respect it deserves and a true display of what food systems in the industry.

Svickova is more than a traditional Czech dish, it is a symbol of family, tradition, and home. My earliest memories are Sunday lunches at my grandmother’s table, where food brought generations together. At 18, I moved alone from Czechia to Vancouver and began as a dishwasher. Through mentorship, hard work, and years in professional kitchens, I became a chef. This dish honours my grandmother, my heritage, and the journey that shaped my culinary identity.

“A Fire Between Two Homes” is a reflection of who I am today: a Filipino cook still learning, but deeply aware of what I carry. This dish begins with chicken inasal, a food shaped by fire, smoke, vinegar, annatto, and family memory. It speaks of my history, but also my future: to grow as a chef without forgetting home. My intent is to show Filipino food with honesty, restraint, and soul, and to prove that our stories deserve a place on the world stage
