I have always been fascinated by what grows around me and the techniques different cultures have developed to bring out the best of their terroir. This dish celebrates that curiosity through trout from lac léman and carrots and herbs from our farm. Drawing on techniques learned through my travels across Asia and Europe, and from my grandmother, I use every part of the produce—from peels to carcasses—to reduce waste and create a cuisine that is sustainable, delicate, and harmonious.
