A personal take on the movement of food is one of humble beginnings and humble endings. Between those two points lies what I believe as a chef. Rice congee is simple, traditional, and inexpensive, yet can be elevated without losing its origins. The same is true of the tart. I started with everyday vegetables and, at the end, made exactly that. In between, I transformed them into something special, then returned them to something recognisable. That is the essence of my cooking.
