This dish is a walk through the garden — every part of the bird used, every element drawn from the land around it. It is rooted in years spent at The Chef's Garden in Ohio, where I learned that nothing is waste and everything has flavor. The whole bird mirrors the whole plant: nothing discarded, everything transformed. I want the person eating this dish to feel the same wonder I felt walking those rows — that food, at its best, is an act of attention.

I see the future of cooking as an act of respect for those around you. Care and community are often lost now, but amongst chefs, it will never cease. I believe my role as a chef is to cook honestly, respect the integrity of the ingredient and to share the joy of cooking with as many people as I can. This dish draws inspiration from all that have given me the gift of knowledge, nostalgia and practice. With this dish I hope to honor those gifts and create new experiences as such for others.

Since I began cooking, I have been troubled by the lack of representation of Indigenous and Latin cuisines in elevated food expressions. In this dish, I am sharing the cookery I have learned professionally, and what I have learned in the kitchen of my Abuela. Masa, the fuel of Latin American cuisine, and Poulet Farci on one plate together. I want everyone who eats this, to enjoy the complex flavors of Latin cuisine, juxtaposed with a European protein execution and plating that combines the two.

Three Shores, One Table tells the story of the cultures that shaped my identity as a chef. Born and raised in Maracay, Venezuela, with Italian heritage and professionally developed in Miami, I use lamb as a thread connecting memory, tradition, and evolution. Through three complementary preparations, the dish explores how different culinary traditions can coexist, creating new expressions while honoring their origins. It reflects who I am today and the chef I aspire to become: one who builds bridges.

From the Valley to the Shoreline Wild Razor Clams, Napa Verjuice & Coastal Seaweeds
From the Valley to the Shoreline reflects my culinary identity as a chef working in Napa Valley. Through wild California razor clams, local verjuice, coastal seaweeds, and vine shoots, I express the connection between land and sea. This dish celebrates local producers, seasonality, and a product-driven approach rooted in French technique while looking toward a more sustainable future for fine dining.

Curry and Quail with ingredients My Mother said were healthy
I think that cooking in our future will be simpler in a way. I think the best food is created with us allowing our ingredients to be who they are, by being intentional with each ingredient we choose and how we decide to work with them. I use the term happy food not just when someone feels joy eating, but as the cook who gets to reflect on a time in their life because they got to cook their dish.

Through this dish, I express my journey from a small town in India to Europe and New York. Banana blossom reflects my roots and childhood, sunchoke represents discovery and growth, and chanterelles embody my connection to nature through foraging. Together, they tell a story of heritage, curiosity, and my belief that exceptional plant-based cuisine can be both deeply personal and globally relevant.

For me, this dish embodies my journey as a chef and pays homage to my Appalachian heritage. Being raised in North Carolina, pork is our primary livestock. And these ingredients grow locally in the mountain town where I grew up. For me, bringing refined French techniques that I struggled to learn, to Rustic Appalachian cuisine showcases a new perspective on my home and my community. Highlighting the beautiful flavors of the ingredients and delivering me back to my Nana's house for Sunday supper

I believe great cuisine is created through balance: honoring tradition while embracing new influences. My foundation comes from French training in Paris, where I became fascinated by the Japanese influence on modern French cuisine, particularly its emphasis on seasonality, restraint, and clarity of flavor. Through peak-season cherries, plums, and duck, this dish reflects my belief that the most meaningful cooking comes from respecting the season and allowing ingredients to speak for themselves.
